Simple recipe to try with asparagus

I like this recipe because there's nothing better than FRESH ASPARAGUS cooked just right. We've all had it when it's a little tough and chewy-yuck! This recipe is able to be turned into a low fat dish by substituting butter for olive oil and regular parmesan with low fat. Parmesan cheese isn't really that high in fat or calories anyway but using low fat tastes great anyway, so why not use it???? I don't like nuts in my food. To me, it just tastes weird but the almonds are light and crunchy. It's a perfect recipe for asparagus fans!




Asparagus with Sliced Almonds and Parmesan Cheese


INGREDIENTS (Nutrition)
2 tablespoons butter (I use olive oil!!!!!)
1 pound asparagus, bottoms trimmed
1/3 cup sliced almonds
1/3 cup Parmesan cheese (light or low fat is best)

DIRECTIONS
Melt butter (olive oil) in a large skillet over medium-high heat. Add the asparagus, and cook, stirring, about 5 minutes. Stir in almonds and parmesan, and cook until the cheese is slightly browned, about 3 to 5 minutes

Super Duper Yum Yum!!! It's Paula Deen ya'll!



I know, it doesn't look too appealing but boy is this good stuff. Jessie made this squash casserole last night and I only allowed myself about half a cup. I was VERY skeptical at first because I was thinking "squash........casserole.....hmmmmm??" She didn't use zucchini, only organic yellow squash. She also substituted several things such as olive oil in the place of butter and low fat sour cream instead of regular. When I tell you I wanted to steal the whole bowl, I really could have! YUMMMMMMM!!!!


Time: 55 minutes
Level: Easy
Yields: 6 servings

Ingredients:
6 cups large diced yellow squash and zucchini
Vegetable oil
1 large onion, chopped
4 tablespoons butter
1/2 cup sour cream
1 teaspoon House seasoning, recipe follows
1 cup grated cheddar cheese
1 cup crushed butter crackers (recommended: Ritz)

Directions:
Preheat oven to 350 degrees F.

Saute the squash in a little vegetable oil over medium-low heat until it has completely broken down, about 15 to 20 minutes. Line a colander with a clean tea towel. Place the cooked squash in the lined colander. Squeeze excess moisture from the squash. Set aside.

In a medium size skillet, saute the onion in butter for 5 minutes. Remove from pan and mix all ingredients together except cracker crumbs. Pour mixture into a buttered casserole dish and top with cracker crumbs. Bake for 25 to 30 minutes.

House Seasoning:
1 cup salt

1/4 cup black pepper

1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

Yield: 1 1/2 cups

So, remember waaaaaaaay back earlier this year when I planted "mammouth sunflower" seeds and they actually came up????

We've lost a great legend and angel today. :(




What an influential and positive person Farrah was. Always smiling, such a big heart. May she rest in peace.



Farrah Fawcett, the blonde-maned actress whose best-selling poster and "Charlie's Angels" stardom made her one of the most famous faces in the world, died Thursday. She was 62.


Farrah Fawcett rose to fame in the 1970s, thanks to a best-selling poster and the hit show "Charlie Angels."


Fawcett's death was confirmed by Paul Bloch, one of her representatives at Rogers and Cowan, an entertainment public relations firm.

Fawcett, who checked into a hospital in early April, had been battling anal cancer on and off for three years.

Bloch told CNN that Ryan O'Neal, Fawcett's romantic partner since the mid-1980s, and her friend Alana Stewart were with Fawcett at Saint John's Hospital in Santa Monica, California, when she died.

"Although this is an extremely difficult time for her family and friends, we take comfort in the beautiful times that we shared with Farrah over the years and the knowledge that her life brought joy to so many people around the world," O'Neal said in a written statement.

He had recently told People magazine that the sex symbol was declining.

"She stays in bed now. The doctors see that she is comfortable. Farrah is on IVs, but some of that is for nourishment. The treatment has pretty much ended," he said in a story posted May 7.

Fawcett's cancer journey has been documented in a television special partly shot by the actress. Fawcett began shooting "Farrah's Story," by taking a camera to a doctor's appointment. Fawcett's beauty -- her gleaming smile was printed on millions of posters -- initially made her famous. But she later established herself as a serious actress. Photographer Bruce McBroom placed Fawcett -- then known as Farrah Fawcett-Majors -- in the Indian blanket-draped front seat of his 1937 Chevy and snapped away. Fawcett did her own hair -- a long, tousled cascade of blonde locks -- picked out the red bathing suit and chose the frame later used for the poster, according to a story in the Toronto Star.

The poster, with Fawcett's million-dollar smile front and center, became a sensation.

Soon after the photo shoot, Fawcett was asked to join the cast of a new Aaron Spelling TV show, "Charlie's Angels," about a trio of female detectives who work for a mysterious man named Charlie, whose only appearance in the show was through his voice (supplied by John Forsythe). Fawcett, who played Jill Munroe, was the last to be cast. Co-star Kate Jackson was the known name at the time, but thanks to her poster, Fawcett became the breakout star.

The highly rated TV series kicked off what came to be known as "jiggle TV," series full of pretty actresses who appeared in bikinis at the drop of a hat.

"Denunciations of 'massage parlor television' and 'voyeurism' only brought more viewers to the screen, to see what the controversy was about," wrote Tim Brooks and Earle Marsh about "Charlie's Angels" in their indispensable reference, "The Complete Directory to Prime Time Network and Cable TV Shows."

ABC's "Three's Company" and CBS's "The American Girls" were among the shows that immediately followed, and shows such as "Baywatch" owe "Charlie's Angels" a debt.

But Fawcett didn't stay with "Angels" long. At the end of the first season, unhappy with her contract, she left the show and was replaced by Cheryl Ladd.

Fawcett's career stagnated for a time after "Charlie's Angels." She appeared in a handful of forgettable films and divorced Majors.

But her career received a major boost with her starring role in "The Burning Bed," a 1984 TV movie co-starring Paul Le Mat. Fawcett played an abused wife who sets fire to her husband's bed as he lies sleeping. Fawcett received an Emmy nomination for her performance.

Fawcett also became romantically involved with O'Neal around this time. The pair had a son, Redmond, in 1985.

In recent years, Fawcett has appeared sporadically in the public eye. She posed nude for Playboy in 1995. In 1997, she appeared on "The Late Show with David Letterman," an interview that became notorious for Fawcett's apparent incoherence. She later said she was just having fun with Letterman.

She reunited with her "Charlie's Angels" co-stars, Jackson and Jaclyn Smith, for an awards show in 2006.



Fawcett was born in Corpus Christi, Texas, in 1947. She married Majors in 1973; they divorced nine years later.

She was diagnosed with cancer in 2006.

Vacation's over.... :(



Well, today ends another wonderful week of vacation. I'm just excited that I never had to go to Lafayette this week, whooo hooo! We pretty much played around in the country, tended the garden, fished, found some really cool deer skulls in the woods (i'll post pics later), went to the Daylily festival, ate (alot) and slept late everyday. It was nice but tomorrow starts June and the hot weather is coming very very soon!

Prayers for Katie...



Our dear friend and patient Katie Nicholson had a terrible accident yesterday. She is in ICU at Lafayette General and in need of some serious prayers. She lost her right eye and has horrible damage to her face and head and has a trach tube to help her breath. One of the sweetest and most beautiful girls I have ever met in my entire life...

Please God, help Katie heal and recover quickly from this horrible accident. Touch the doctors hands as they continue to operate on her. We believe in you Lord and know you will pull her through.

Life is a blessing...


Even though I've felt terrible the past few days I have to say that life sure is a blessing! Not only is it Lainey's first birthday today, but my dear friend Leah found me on facebook and we have been chatting for hours! I missed her so much and know that God has sent her to me again for something really great! When life seems like it's just letting you down all it takes is the little things to make you realize how great life really is and how small and unimportant most little daily dramas are. I'm also lucky to have the greatest friends a girl could have!

My Hero...Tiffany Lakosky!

Everyone knows I LOVE to hunt! It's become obsessive within the past 1 1/2 years thanks to my awesome boyfriend. Even though I've loved hunting (I should say observing) and fishing (I was always the queen fisherwoman) with my dad when I was younger, it never quite became a full time hobby like it has been the past 2 seasons. I'm not kidding when I say that I think about it at least 5 times a day and this is the off season (yikes!). It started in the winter of 2007 when me and Josh started dating and I begged him to take me with him to duck hunt. He thought I was insane and I would only last one day because seriously, what girls like to get up at 4:30 am and skip the make-up? Boy was he WRONG in thinking that would be the first and last day of me tagging along!!! It became a passion almost instantly and I knew that I had to get my hunting license. In the state of La you have to go through a 3 day class and shoot clay pigeons in front of a hundred people. Needless to say I was well prepared after hanging out with the "master" (that would be Josh) and shattered all 3 of my skeet and made an "A" on my written test. I was finally able to hunt legally after watching and envying Josh and his friends for several months. PRAISE THE LORD!!! I think I was more happy that day then when I graduated high school.

I killed several ducks during the 2008-2009 duck season and my very first doe. It was a great year! I killed her at 160 yards which is definitely something to brag about!!!




Now the first deer I ever shot at was this little (too young but I was gonna shoot it anyway) 6 point:



The gun misfired and he just stood there and looked at me. These are pictures caught on the game camera as I was aiming at him. You can see he's very worried for his life, yeah right!



So everyone knows there aren't many women hunters. Well, a few months back I saw this blonde girl on a hunting dvd in walmart and he told me she was Tiffany Lakosky. She and her husband Lee hunt together professionally and have several tv shows and are the cutest couple ever! Since I've been practicing shooting the bow (totally harder than it looks), and I'm doing REALLY well I might add, she's been my new hero! Goes to show that women can have just as much if not more fun than men in this sport! Now, I've got to work on harvesting some racks like she's got in these pics:




I've definitely got the drive. Now I need the deer!

Party at the pond...




Have I mentioned how sweet Josh is?? He threw me a birthday party Saturday at the pond! About 30 friends showed up and we had a blast. We bbq'd, fished and hung out by the bonfire that night. I'm kinda dreading this year because I'm getting closer to 30 and I am the anti-aging queen but everyone told me I look about 23 so that made me feel waaaaaaay better! haha!

I tried not to take pictures and relax a little, but there were too many Kodak moments to miss.

My rave of the week...

Naked Juice.



I started getting sick Sunday morning with a sore throat and congestion in my chest. Everyone knows that's not fun. Anyway, so yesterday morning on my way to work I stop at the gas station for some juice. I come across Naked juice, which I had tried before but they are SOOOO expensive (about $4 for 15.2 oz) so I don't buy them regularly. No preservatives, nothing man-made, strictly fruit juice. In fact, each bottle has about 3-4 servings of fruit. I'm not a huge fruit fan but this stuff is AMAZING! I bought 4 of them and drank two yesterday. I woke up this morning and felt so much better, yay! Of course, Naked juice doesn't get all the credit (since i was drinking tons of water and taking Vitamins like crazy) but it probably should get a large portion. I will definitely keep this in my routine, even if it's one or two a week!
